Grilled Fruit Pizza

Ingredient List:

  • 1 ea — Peaches — firm yet ripe
  • 1/2 ea — Pineapple — firm yet ripe
  • 20 ea — Red Seedless Grapes — firm yet ripe
  • 1 ea — Lemon
  • 3 Tsp — Sour Cream
  • 3 oz — Cream Cheese
  • 1 pkg — 8 inch Flour Tortilla
  • 1 tin — Steven Raichlen’s Dessert Rub
  • 3 Tbsp — Grape Seed Oil

Instruction:

Peel, core and section the Peach and Pineapple as if they were an orange into ¼–3/8″ slices, then cube the pineapple slices. Cut the Grapes in half. Squeeze ¼ of a lemon over pieces. Dust with light coat of Dessert Rub. Fork mix the sour cream and cream cheese to a smooth blend and stir in 1 tsp Dessert Rub.

Sear all sides of the fruit pieces for one minute per side until starting to color and soften.

Spritz the tortillas w/Grapeseed oil, and crisp both sides on the Griddle on medium heat (4–5 second hand hold) take the crisped tortillas and lite coat one side with the cream cheese blend, set aside.

Arrange the fruit blends on the held tortillas,

Serve Immediately!
