Smoke Roasted “Prime Rib”

Ingredient List:

  • 1 — Nature Well ½ size Rib Eye “Prime Rib”
  • 3 Tbsp — Herb It Up Seasoned Oil
  • 3 oz — Old World Mediterranean Seasoning
  • 7 oz — Old World Steak Seasoning
  • 1/2 bottle — Leslie Elizabeth Cherry Chipotle Glaze
  • 1/2 bottle — Nielsen – Massey Pure Coffee Extract
  • 1/2 bottle — Your Favorite Lager
  • 4–6 — chunks Cherry Wood

Instruction:

Take well chilled “Prime Rib” and Trim any excess surface fat coat off the sides and edges.

Coat the “Prime Rib” lightly with Herb It Up Seasoned Oil and then a light to medium coat of the Old World Mediterranean Seasoning, on both sides and the edges. Then using a medium to heavy coat of the Old World Steak Seasoning, re-coat on top of the existing rub on both sides and the edges.

Mix the basting sauce using the 1/2 bottle of Leslie Elizabeth Cherry Chipotle Glaze, the 1/2 bottle of Nielsen — Massey Pure Coffee Extract, and a 1/2 bottle of your Favorite Lager. Set aside, and strain the seeds if using a basting bottle.

Preheat the smoker or gas grill to low and slow heat (170–210°), and add the Cherry. Set the “Prime Rib” into the smoker in the indirect heat zone for ~1½ hour until meat surface starts to sweat ~120° meat temp. Start basting the “Prime Rib” with the Chipotle, Coffee, and lager Marinade mixture as needed to build the bark up. Then elevate the oven’s temperature to 350°. And roast until meat has a bronze color, ~ 1 hour. Finish the meat at 350° for ~ 1/2 to 1 hour until the internal meat temp is 135° to 140°…. Pull the “Prime Rib” to rest and then slice meat into ½″ to 1″ thick slices. You can add a little horseradish or horseradish cream sauce. Serve.
