Grilled Peach Pizza

Ingredient List:

  • 3 — firm ripe Peaches
  • 1 — 6 oz pack Red Raspberries
  • 3 Tsp — Sour Cream
  • 3 oz — Cream Cheese
  • 1 — 8 inch Flour Tortilla
  • 1 tin — Steven Raichlen’s Dessert Rub
  • Grape Seed Oil

Instruction:

Section the peach as if it were an orange into ¼–3/8″ slices. Squeeze ¼ of a lemon over pieces.

Dust with light coat of Dessert Rub.

Fork mix the sour cream and cream cheese to a smooth blend and stir in 1 tsp Dessert Rub.

Mash the berries with 1 Tbsp Dessert Rub.

Spritz the tortilla w/grapeseed oil, and crisp one side on the Griddle on medium heat (4–5 sec hand hold). Turn the tortilla and lite coat the crisp side with the cream cheese blend, set aside.

Sear both sides of the peach slices for one minute per side until medium color.

Arrange peaches on the held tortilla and smooth the raspberry blend over the peaches. Immediately finish crisping the bottom of the tortilla.

Serve immediately.
