Ingredient List:
- 4 — skinless, boneless chicken breasts
- Grapeseed oil
- Coarse sea salt
- Ground black pepper
- 1 package of prosciutto (or eight thin slices)
- 1 package bleu cheese (block or crumbled)*
* Substitute with any other semi soft cheese
Instruction:
- Preheat grill to 400°F (204°C).
- Place each breast between a sheet of plastic wrap and pound to 3/8 inch thickness.
- Brush each side of the breasts with olive oil and sprinkle with salt and pepper to taste.
- Place the breasts over direct heat for 3–4 minutes.
- Flip the breasts over and move them to the outer areas of the grill grate for indirect cooking.
- Place two pieces of prosciutto on each breast, then 2–3 thin slices of blue cheese.
- Close the top vent fully to slowly lower the temperature.
- Grill for 8–10 minutes.
