Ingredient List:
- 4 to 8 — Dodge City Natural Angus Flat Iron Steak — 1/2″ thick
- 1 Bottle — Lager
- 1 Bottle — Hereford House Steak Marinade
- 1 Tbsp — Slabs Wow Your Cow Beef Rub
- 1 ea — Jaccard Meat Tenderizer and Vacuvin Marinater

Instruction:
On a cutting board lay out your Dodge City steaks and use the Jaccard 4–5 times or more — across and side to side, make the penetrations evenly across the surface of the meat. Take care not to penetrate more than ¾ of the way through. Place the steaks into the Vacuvin and pour about ½ to the entire bottle of the Steak Marinade then pour about ½ to the entire bottle of the lager to cover the steaks fully. Place the top on the Vacuvin and use the pump to pull a vacuum. Turn and Shake to evenly coat all the steaks, leave to marinate ≈45 minutes.
Remove the steaks and shake off any excess marinade. Then take the Wow Your Cow and dust the steaks lightly, set aside at room temp ≈10 mins to absorb the flavor.
Preheat the grill on high heat (2–3 second hand hold).
Sear 2–3 minutes per side on the grill then move to indirect heat and finish cooking to a medium rare to medium doneness.
Serve immediately.
